Who said you can only eat tacos on Tuesday? Don’t wait to try these delicious and nutritious tacos. Each taco has a soft flour tortilla that is topped with fire roasted pollock, shredded red cabbage, diced red onions and cheddar and monterey jack cheese.

Ingredients

  • 3 2/3 oz Fish, Fire Roaster Pollock

  • 1 oz Cheddar & Monterey Jack Shredded Cheese

  • 1/4 c Red Cabbage, Shredded

  • 2 tsp Red Onions, Fresh, Diced

  • 2 count Flour Tortilla, 6″

Directions

  • Prepare the Fish: TO BAKE: Place frozen portions on a lightly oiled sheet pan. CONVECTION OVEN: Preheat oven to 375°F and bake for 12-17 minutes. CONVENTIONAL OVEN: Preheat oven to 400°F and bake for 18-22 minutes. NOTE: Cook to an internal temperature of 165°F degrees minimum
  • Shred the fish into small pieces.
  • Serve 2 tacos. Each taco has: 1/2 piece of fish, 2T cheese, 2 T shredded red cabbage, and 1 tsp diced red onions.
  • HACCP
  • Food prep areas, Equipment, and utensils, to be used in recipe will be washed and sanitized prior to beginning the preparation and cooking.
  • Assemble all ingredients, utensils, etc. to be used in recipe within easy reach of prep area so that food safety can be managed more effectively as well as better control of contamination and cross contamination.
  • Remove frozen product from freezer using oldest pack date first.
  • CCP: Take and record on a temperature log all beginning temperatures of refrigerated foods before beginning the recipe.
  • Wash hands thoroughly before handling food, after handling contaminated food or objects, and before switching to another step where there is an opportunity for contamination. This applies as well for before and after glove use.
  • Use clean pair of gloves when handling raw product. Replace gloves after handling any other object.
