This series concentrates on environmental sustainability. In this coaching series, we will cover areas in their operations that can be altered to improve the quality of the environment. Examples ranging from Costco and school districts utilizing value chain analysis provide examples of how a value chain analysis can support decreasing the environmental impact of a food service operation. Value chain analysis is similar to supply chain analysis but in that they work in reverse. Value chain analysis follows a product from the point of sale to all of the activities that are required to get it there. By conducting a value chain analysis on food items that are not consumed and placed in bins, food service operators have the opportunity to identify ways to reduce waste.

About Instructor

Isaiah Ruffin

Chef Isaiah Ruffin was named after his Great Grandfather, a World War I Army veteran. Currently, he is a personal chef in the D.C Metro area and Ph.D. Candidate studying the correlation between food literacy and academic achievement in third graders. He is a strong believer that if we are going to do something right it will not be easy. He is someone who does everything with the people and planet in mind.
