Homemade Chicken Lo Mein

This Chinese inspired dish is just like what you would get at your favorite takeout location. The homemade lo mein includes noodles, fresh sautéed vegetables, lean diced chicken and a savory sauce.


  • 23 oz 23 Diced Precooked Chicken

  • 1 c 1 Celery, Diced

  • 1 c 1 Olive Oil

  • 2 qt 2 Fresh Coleslaw Blend

  • 1 c 1 Scallions, chopped

  • 2 tbsp 2 Raw Ginger Root, Minced

  • 2 tbsp 2 Fresh Garlic, Minced

  • 2/3 c 2/3 Sauce Soy

  • 2 tbsp 2 Sugar

  • 1 1/2 tbsp 1 1/2 Sesame Oil

  • 3 tbsp 3 Hoisin Sauce

  • 20 oz Spaghetti Noodles, 10″, Uncooked

  • 20 c 20 Water


  • Pre-prep
  • Thaw and heat chicken.
  • Dice celery and onions. Keep the white part of onion separate from the green tops.
  • Mince ginger and garlic.
  • Prepare noodles. Drain and set aside.
  • In a bowl whisk together soy sauce, sugar, sesame oil, and hoisin sauce. Set aside.
  • Heat oil in a wok or large and deep non-stick skillet over moderately high heat.
  • Add celery and sauté 3 minutes.
  • Add slaw mix and sauté 2 minutes, then add white part of green onions, garlic and ginger and sauté 1 – 2 minutes longer, until veggies are all crisp, but tender.
  • Toss in noodles and chicken then pour soy sauce mixture over top and toss to coat. Garnish with green tops of onions. Serve warm.
  • Serve 2 cups. Toss frequently to ensure even distribution of chicken in each portion.
  • Food prep areas, Equipment, and utensils, to be used in recipe will be washed and sanitized prior to beginning the preparation and cooking.
  • Assemble all ingredients, utensils, etc. to be used in recipe within easy reach of prep area so that food safety can be managed more effectively as well as better control of contamination and cross contamination.
  • Wash hands thoroughly before handling food, after handling contaminated food or objects, and before switching to another step where there is an opportunity for contamination. This applies as well for before and after glove use.
  • Use clean pair of gloves when handling raw product. Replace gloves after handling any other object.
