Spicy Crispy Popcorn Chicken Salad

This salad is a fan favorite that the students love. Using the bed of lettuce as your base, you build up with spicy chicken nuggets, carrots, cheese, tomato, and cucumbers.


  • 1 Cup Romaine Lettuce

  • 1 Cup Spinach

  • 1 Ounce Mild Cheddar, Shredded Cheese

  • 1 Tablespoon Carrots, Shredded

  • 1 Tablespoon Tomatoes

  • 1 Tablespoon Cucumbers

  • 1 Roll Dinner Roll

  • 1 Ounce Croutons

  • 5 Pieces Spicy Chicken Nuggets


  • Wash all raw vegetables thoroughly before combining with other ingredients.
  • Assemble salad by topping lettuce with cucumber, tomato, cheese, carrots, spicy chicken nuggets, and croutons.
  • Serve with one dinner roll.
  • Food prep areas, Equipment, and utensils, to be used in recipe will be washed and sanitized prior to beginning the preparation and cooking.
  • Assemble all ingredients, utensils, etc. to be used in recipe within easy reach of prep area so that food safety can be managed more effectively as well as better control of contamination and cross contamination.
  • Remove frozen product from freezer using oldest pack date first.
  • CCP: Wash hands thoroughly before handling food, after handling contaminated food or objects, and before switching to another step where there is an opportunity for contamination. This applies as well to before and after glove use.
  •  Use clean pair of gloves when handling raw product. Replace gloves after handling any other object.
