This traditional meatloaf recipe is a fan favorite at Greenville County schools. This simple scratch cook recipe is delicious and nutritious.

Ingredients

  • 1 Can 1 All Purpose Pan Spray

  • 17 Pounds 17 Ground Beef

  • 12 Ounces 12 Liquid Egg

  • 2.5 Pounds 2.5 Bread Crumbs

  • 12 Cups 12 Ketchup

  • .5 Cup .5 Worcestershire Sauce

  • 1.5 Pounds 1.5 Raw Chopped Onions

  • 2 TBS 2 Garlic Powder

  • 1 tsp 1 Salt

  • 2 TBS 2 Black Pepper

Directions

  • Prepare workstation by cleaning and sanitizing all areas.
  • Assemble all ingredients, utensils, etc. to be used in recipe within easy reach of prep area so that food safety can be managed more effectively as well as better control of contamination and cross contamination.
  • Wash hands for 20 seconds in a hand sink, dry properly and put on gloves before beginning preparation. Repeat process as often as needed per HACCP guidelines.
  • Preheat oven to 350 degrees.
  • In mixer or mixing bowl, combine all ingredients (reserve 2 cups of ketchup per pan of meatloaf prepared to use in step 7) and mix thoroughly.
  • Spray 2″ hotel pans with coating spray.
  • Divide mixture evenly between pans (1 pan = 32 servings; 2 pans = 64 servings; 3 pans = 96 servings). Press meat mixture evenly in pans. Add 2 cups of ketchup per pan spread evenly over meatloaf.
  • Bake uncovered for approximately 40 minutes. Product must reach an internal temperature of 160 degrees for 15 seconds.
  • Drain liquid from pans. Cover and place in warmer maintaining an internal temperature of 140-150 degrees. Product must rest in warming cabinet for 15 minutes before serving.
  • Cut each pan into 32 (8×4) equal pieces before serving. Garnish with parsley
